Heading into the grocery store earlier, I remembered that I wanted to try making chicken soup again. I grabbed the basic ingredients and tossed it all together early this afternoon, it’s not the best I’ve ever had of course but it’s darn good. I need to add some kind of seasoning to enhance those I’ve already added. Just what I’m not sure. Yum!

Hi Rebecca, it really is! The last time I tried, I added waaay too much chicken broth. Could use more veggies too but for a quickie meal it’s darn delicious.
Looks amazing. Did you put in a bay leaf? I have no idea why but there is always a bay leaf in chicken noodle soup.
Well… no. The leaf must add that certain flavor that makes the soup just right? It needs more veggies, and a certain spice, whatever that is, to round the flavor out. I need a woman’s touch in my kitchen!
Lol. Mine wouldn’t help. Dan usually cooks things like that – or fixes mine. Last night I made chicken quesadillas and forgot how to flip them. Dan got a pile of chicken, vegetables, cheese, and tortillas on his plate. It tasted good but the presentation was sad. 🙄

It is, Anneli! Not bad for a quickie meal but like I mentioned to Rebecca and Annmarie, it needs a certain spice to round the flavor off. Whatever that may be. Annmarie says she puts a Bay Leaf in hers.
I put a half teaspoon of curry paste in mine.
I have no idea what that is beyond curry powder?
It comes in a jar and is a mix of curry powders and a bit of vinegar and I don’t know what else, but it is a wonderful addition to soups and gravies. Patak’s Curry Paste.

That’s the one. Mine is a Madras curry, but I didn’t see it there. Similar to those pictured though. The jar and labeling is the same.
OK, you’ve got me curious about trying this in my chili and other dishes. I wish now that I would have stayed in the kitchen with my mother and learned how to make her dishes. Salmon patties, bean soup, spaghetti and more. Dad and I miss her cooking so much…

I know. I miss mine too. I was just thinking yesterday about how she used to give me spelling lists of German words so I could learn to spell them right. She made a fun game of it.
